Products list: It's not that we are re-inventing food, we are simply re-discovering the old ways, the traditional ways of doing things right. We make almost all of our food from scratch using ingredients, which we know are healthy, and taste good. Our Fish coming from Leigh Fisheries, in Leigh. It is fresh, wild and very local. We like Leigh fisheries because they practice catching fish in a sustainable manner, they use hook and line instead of nets. Swiss Deli in Auckland, who also makes our bacon, makes our double smoked ham. We buy our bacon in large slabs and slice it daily. The bacon is also called "speck" which is a German way of preparing bacon. We do sell a limited amount of bread each day to customers of the restauarant based on what we can spare. Preparation Samples: Mayonnaise - We blend free range eggs, fresh lemon juice and canola oil Seafood Chowder - For the chowder we use mussels, fresh fish, onions and potatoes. We make it without the cream added and store it over night before using. This improves the flavour. We warm it, then add the cream at the times of service. Our Beef - is slowly cooked after being flavoured with red wine, onions, garlic salf and pepper. It is initially roasted for 3 hours at 70 degrees C, then for at least 12 more house at 75 degrees C.
